The POLYEDIT command is a great tool for editing polylines.  A quick way to start POLYEDIT is to highlight a polyline , right-click, and then pick Polyline Edit from the pop-up menu.

Another classic polyline editing tool is to use the Properties palette.  Just double-click on a polyline and the palette will automatically pop-up for you.
