What's the easiest way to find all of the lines that have a three dimensional thickness and how can I make them two dimensional again?

The Quick Select utility. This utility can be found in the top right corner of the properties box.  It's the last button on the right.  Simply change the object type pull down listing to "Line" (or any other object type in the list that could have the property of thickness), then select "Thickness" in the Properties area, change the Operator to "<> Not Equal", and enter "0" (zero) for the Value.  Pick the OK button and any entities from the criteria chosen will now be a selection set in the properties box.  Highlight the Thickness area and change the listing to 0 (zero). 

Only problem with this fix is blocks of course.  You will have to use the REFEDIT command before changing the thickness of block entities.

Remember, polylines, arcs, Circles, traces, text, and points can also have thickness too!
